Located on the limestone slopes of Pic Saint-Loup in the heart of the garrigue, 250 meters above sea level.

Vinification

Hand harvest during the day, vintage sorted and destemmed in cellar. Alcoholic fermentation under continuous temperature control (max. 25 ° C). Daily practice of extraction and homogenization operations: pumping, shedding, or punching.

Vatting for a total duration of one month.

Dewatering and pressing of marc.

 

Tasting notes

Beautiful brilliant ruby color.

Nose of a beautiful freshness, menthol aromas and garrigue, with a mineral note, black olive and fresh pine.

Cherry-fruity, a sweet note, a spicy finish, long enough.

Food pairing

Brochettes, zucchini gratin, small stuffed, charcuterie, duck breast with fresh figs, goat or brie.

Can be drunk fresh.
