Harvested early in the morning at the coolest time of day, around 5am. Direct pressing after a short period of maceration.
The grape must is chilled (at around 8°C) for 36 hours to allow for settling. After selection of the clari ed juices, the cold alcoholic fermentation takes place in steel vats under constant temperature control.
The robe is shiny and clear with lovely silver highlights : superb tears. Nose is generous and ample.
Hints of plum jam, rhubarb, red fruit jelly ; a touch of broom ower after a storm.
A wine with nice complexity and balance.
Ham with melon, small stuffed vegetables, tajine or Spanish Fideua, fresh or semi-dry goat cheese.
