Terroir
A selection of the best plots from our estate : terraced vines at an altitude of 300m on the southern slopes of the Pic Saint-Loup, unique in the area.
Of the Mesozoic era, hard limestone from a long sedimentation (100 million years) following a complete immersion of the Jurassic, poor and uncultivated soil up until modern day.

Vinification
Harvested by hand during the day and placed in crates, the grapes are sorted and de-stemmed in the cellar. The alcoholic fermentation is temperature controlled (25°C max). Daily extraction and homogenization operations take place: pumping-over, rack and return, cappunching.
Total vat time is one month. Devatting and pressing of the pulp.
Ageing
Aged in French oak barrels (Tonnellerie Bordelaise, Taransaud, Saury, Laf te…) 2/3 new wood, for 12 to 16 months.
Tasting notes
Black robe : the black expresses its depth. Superb tears. A nose of fresh fruit preserves.
Silky and gourmet on the palate.
Expresses the terroir and concentration of maturity.
An exceptional wine of a rare elegance. A sophisticated wine.
Food pairing
Perfect with wild boar stew, partridge with lentils, duck breast with gs and an aged Cantal or epoisse cheese. Also delicious with a chocolate cake or French toast with red fruit.
Potential cellar time : 10/12 ans.
May be decanted.
