Les Costes 2018

Once upon a time there was grandfather’s cottage in a place called “Les Costes”…A cottage made of beautiful stone in the middle of the Pic Saint-Loup scrubland…”We played amongst the juniper bushes, we picked wild blackberries, the countryside smelled so good” (Mireille et Henri-Pierre RAMBIER)…And here you have it, our cuvee “Les Costes”!

Grape varietes

80% Syrah, 20% Grenache

Limestone-clay soil.

Harvested by hand during the day and placed in crates, the grapes are sorted and de-stemmed in the cellar. Each plot is vinified separately so that the terroir expresses its best potential every time. The alcoholic fermentation is temperature controlled (25°C max). Daily extraction and homogenization operations take place: pumping-over, rack and return, cap-punching. Total vat time is one month. Devatting and pressing of the pulp.

Aged in French oak barrels (Tonnellerie Bordelaise, Taransaud, Saury, Laf te…) 1/3 new wood, for 12 months.
