70% Syrah, 30% Grenache
the vineyards are partly situated on the limestone slopes of the Pic Saint-Loup in the heart of the Mediterranean garrigue, close to the ceceles lake on the east of the Pic Saint-Loup.
Harvested by machine early in the morning at the coolest part of the day, the grapes are sorted and destalked using the on-board selection system. then, the grapes are immediately pressed to 0extract the juice. After a short settling the clari ed juices are sent for the fermentation. the cold alcoholic fermentation takes place under the maximum temperature of 18°c for an approximate period of 20 days.
The wine has a beautiful light pink robe.
It is fresh and tempting on the nose with the oral aromas of green tea and white skinned fruit.
The wine is gourmet and refreshing to taste.
Advised with fritters of zucchini ower, a sea bass let “a la plancha” with a dribble of olive oil, also with sushi, a tempura calmar or sh, a veal roast with the citrus fruit, stewed vegetables with figs.
