Constance, sixth generation of our family, was born in 2014 : grand- daughter of Jean-Pierre, the great granddaughter of Irene, the descendant of Louis and Gabriel.

This wine is dedicated to her. Constance is unique (or almost) : only 1848 bottles, all numbered. Beautiful to taste! And especially wonderful emotions of joy and happiness!

 

Grape varietes

80% Syrah, 20% Grenache

 

Terroir

comes from the best grapevines of our estate.
the soil is argillaceous limestone, partially terraced vines at an average altitude of 300m.

 

Vinification

Harvested early in the morning at the coolest time of day, around 5am. Direct pressing after a short period of maceration of the skins. the grape must is chilled (at around 8°c) for 36 hours to allow for settling. After selection of the clari ed juices, the alcoholic fermentation takes place in steel vats under controlled temperatures (90%) and in french oak barrels (10%) with batonnage (gentle stirring).

 

Ageing

the new french oak barrels come exclusively from the Bernard cooperage, a family run business settled in the heart of the charentes region of france since 1936. the ageing in the barrels lasts 4 months and brings complex aromas and lovely strength.

 

Tasting notes

Lovely shiny pink color.
Strong on the nose, roasted.
Patchouli, incense and wax aromas.
An elegant freshness; the palate is generous and ample. the nish is salty and mineral.

A gourmet rosé that shakes up standard tasting.

 

Food pairing

Squid in sauce, bouillabaisse, shrimp risotto, wok and tempura, mixed sh plate, grilled turbot, sea urchin.
