Constance, the sixth generation of our family, was born in 2014: the daughter of Mireille, the granddaughter of Jean-Pierre, Irene’s great-granddaughter, the descendant of Gabriel and Louis. Our desire is also to always improve in the vineyard and the cellar and to go upmarket.
 

Grape varieties

70% Syrah, 30% Grenache.

Age of the vines

Syrah 17 years old, Grenache 50 years old.

Planting density

5.500 pieds/ha.
yield 25hl/ha.

Type of soil

Calcairo-calcaire et argilo-calcaire. Selection in our best plots of syrah (partly in terraces) on the southern slopes of the Pic Saint-loup at 300 meters altitude.

Vinification

Harvested by hand in separate crates the grapes are carefully selected after being gathered from the vine stock. upon their arrival to the wine cellar the grapes are placed on the sorting table to get rid of the last imperfections. Only the best ones are put into the barrels/vats after being destalked and pressed. the fermentations are temperature controlled. Daily cap-punch- ing allows to reveal the best potential of every grape.

 

Ageing

100% of this wine is aged during 18 months in 2 new oak barrels of 225 l produced by the tonnellerie Seguin Moreau which were specially selected for its nest grapes and the softness of its aromas.

Tasting notes

The wine has a very deep crimson robe. it is fruity and spicy on the nose.
The attack is full and strong. the wine is generous on the palate with full silky tanins. then the aromas of violet, toasted bread and morello cherries are disclosing. the nal is long and spicy with the powdered tanins left on the palate.
The taste is intensive, elegant and harmonious.

 

Food pairing

Perfect with eggs with seasonal truffle at Gilles Goujon’s restaurant, a lamb shoulder with fresh porcini mushrooms, beef ribs Black Angus grilled on the wood fire served with a gratin dauphinois with some nutmeg. constance Rouge is also pleasant to finish the festive meal with a dark chocolate cake.
